I am cooking my first turkey and I want to cook the giblets..the whole nine yards. Many (most) of the recipies I read say to cook the neck, heart and gizzard for a long time, but only cook the liver for a short time because it gets bitter. Which one is the liver? How do you tell? One site said it could be yellow or tan or dark mahogany red depending what the bird ate last. It's shape is also unpredictable because they get broken at the processing plant. Can anyone help?
