Recipe: Dijon Chicken Drummettes Deluxe

DIJON CHICKEN DRUMMETTES DELUXE

20 broiler-fryer chicken drummettes
1/2 cup fat-free, cholesterol-free mayonnaise
3 tablespoons Dijon mustard
1/2 teaspoon grated onion
* 2 cups cheese breadcrumbs
1/2 teaspoon pepper

Cover a 15-1/2 by 10-1/2 by 1-inch baking pan with foil and spray lightly with vegetable cooking spray. In small bowl, stir together mayonnaise, mustard and onion. Brush each drummette with mayonnaise mixture and then roll in cheese breadcrumbs. Arrange chicken in single layer on prepared pan; sprinkle with pepper. Bake in 375 degrees F. oven for about 30 minutes or until chicken is brown and fork can be inserted with ease.

Makes 20 hors d'oeuvres.

* If cheese bread is unavailable for crumbs, cheese crackers may be substituted; however, cheese breadcrumbs give a lighter crust.
