Hello Everyone!

I have been watching DVD's of The Sopranos and Six Feet Under, two of my favorite HBO programs. Unfortunately, Six Feet Under had their series finale a few weeks back and it was the BEST ending to any show I had ever seen! I cried and cried at the ending, it was that moving. Now I am looking forward to Season 5, or is it 6, of The Sopranos. I believe I have to wait til March!!!!

I went to the library this afternoon and one of the librarians, bless her heart, Miss Linda had a little surprise for me. She had made Paula Deen's Ooey Gooey Butter Cake. Man, that was killer!!!! Incredible little tidbit, tasted like a brownie. It was insanely delicious! I believe Betsy has that showcased here on the cookbook section because Miss Linda told me she got the recipe from there. It is from the Lady and Sons Dessert Book.

I am baking her Applesauce Bread right now and the aroma comes all the way back here.....delicious!

Tonight's menu is:

Roasted Salmon with Maple Glaze
Lemon Rice with Golden Raisins and Almonds
Sesame Green Beans
Spinach Salad with Mandarins and Cashews
Mama's Sweet Iced Tea
Applesauce Bread

ROASTED SALMON WITH MAPLE GLAZE

Servings: 6

1/4 cup maple syrup
1 garlic clove, minced
1/4 cup balsamic vinegar
2 lbs. salmon, cut into 6 equal size fillets
1/4 tsp. kosher salt
1/8 tsp. freshly cracked black pepper
fresh mint or parsley for garnish

Preheat oven to 450. Lightly grease a pan with cooking spray.

In a small saucepan, over low heat, mix together the maple syrup, garlic and balsamic vinegar. Heat until just hot and remove from heat. Pour half of the mixture into a small bowl for basting. Reserve the rest for later.

Pat the salmon dry. Place skin side down on the pan. Brush with the mixture. Bake for 10 minutes, brush again and bake for another 5 minutes. Continue to baste and bake until fish flakes easily about 20-25 minutes total.

Transfer to plates. Sprinkle with salt and pepper and top with reserved maple syrup mixture. Garnish with mint or rosemary and serve immediately.


LEMON RICE WITH GOLDEN RAISINS AND ALMONDS

Servings: 4

1/2 cup slivered almonds, coarsely chopped
3 Tbsp. lemon juice
2 tsp. lemon zest
1 cup uncooked brown rice
1 3/4 cups unsalted chicken broth
1/4 cup chopped onions
1/2 tsp. ground cinnamon
1/4 tsp. ground nutmeg
1 Tbsp. trans-free margerine
1/3 cup water
1/2 cup golden raisins
1 cup frozen peas
5 Tbsp. honey

Preheat oven to 325. Lightly coat a baking sheet with cooking spray.

Spread the almonds on the sheet and bake, stirring occasionally until golden and fragrant, about 10 minutes. Transfer immediately to a plate and cool completely.

Add water to the bottom of a double boiler. In the top section, place the lemon juice, zest, rice, broth, onions, cinnamon, nutmeg and margarine. Heat the double boiler, stirring occasionally. Cover and simmer for 30 minutes or until the liquid is absorbed.

In a small saucepan, add the water and raisins. Bring to a simmer, cover and cook for 5 minutes. Add the peas and simmer 1 more minute. Add the raisin and pea mixture to the rice in the double-boiler and simmer until all liquid is absorbed, about 15-20 minutes more.

Mix and fluff the rice and transfer to a serving dish. Sprinkle with toasted almonds and drizzle with honey. Serve immediately.


SESAME GREEN BEANS

1 lb. green beans
1/2 cup sliced portabella mushrooms
1 Tbsp. sesame oil
1 tsp. sesame seeds
1/2 tsp. seasoned salt

Place green beans and mushrooms in a micro-waveable bowl. Cover and microwave on HIGH for 8-10 minutes or until they are tender.

Stir in remaining ingredients, cover and set aside 2 minutes. Serve.


APPLESAUCE BREAD

Makes 1 loaf

2 cups all-purpose flour
1/4 cup dark brown sugar
1 tsp. ground cinnamon
1 tsp. baking powder
1 tsp. baking soda
3/4 tsp. salt
1/2 tsp. ground nutmeg
1 tsp. vanilla
1 stick butter, softened
1 cup applesauce
2 eggs
1 cup raisins
1/2 cup chopped walnuts

Preheat oven to 350. Grease and flour a loaf pan.

Combine all ingredients except raisins and nuts. Mix well until blended. Stir in raisins and nuts. Pour into prepared loaf pan.

Bake for 60-65 minutes.
