Recipe(tried): Tuna Fish Bake - very easy

Main Dishes - Fish, Shellfish
TUNA BAKE

This is a family favorite and very easy to prepare.

2 cans (4 oz each) Tuna Fish in water
2 cups grated carrot
1 large white onion finely chopped
1/2 cup chopped parsley
1 cup grated strong cheddar cheese
2 large eggs - beaten
1 cup mayonnaise
1/4 cup lemon juice
salt, pepper & cayenne pepper to taste

Mash tuna in large bowl, add water and all other ingredients and mix well.

Bake in large greased pie dish for about 45 minutes in a medium oven. (I have baked this in the microwave)

Serve cold, cut into pie wedges, with a green salad. (8 good portions)
