Recipe: Camarones en salsa Chilena (Shrimp in a Spicy Sauce) (Chile)

CAMARONES EN SALSA CHILENA (SHIMP IN A SPICY SAUCE)
Adapted from: The Chilean Kitchen by Ruth Van Waerbeek-Gonzales
Servings: 4

1 large onion, chopped
3 tablespoons butter
1 (28 oz) can tomatoes, chopped
2 cloves garlic, chopped
1 tablespoon chile paste
1/2 teaspoon oregano
2 pounds shrimp
salt and pepper, to taste
1 tablespoon chopped parsley (for garnish)

Preheat oven to 375 degrees F.

Saute onion in butter for 7 minutes.

Add tomatoes, garlic, chile paste, and oregano. Stir and simmer for 10 minutes.

Season with salt and pepper. Pour mixture into a baking dish.

Toss shrimp with salt and pepper and push into the sauce.

Bake for 10 minutes at 375 degrees.

Sprinkle with parsley and serve.
