Recipe: Turkey Hash with Poached Eggs (using ground turkey)

TURKEY HASH WITH POACHED EGGS

3 cups ground cooked turkey
3 cups finely chopped, cooked potatoes
3 tbsp chopped green bell pepper
3/4 cup chicken broth
1/2 cup finely chopped onion
2 tsp salt
ground black pepper
TO SERVE:
4 poached eggs
liquid hot pepper sauce (to taste)

Preheat oven to 350 degrees F. Grease a large casserole dish.

Mix turkey, potatoes, bell pepper, chicken broth, onion, and salt. Place in large greased casserole, and cover.

Bake at 350 degrees F for 30 minutes. Remove cover and bake 30 minutes more.

Arrange poached eggs on top of hash and serve with pepper sauce.

Servings: 4
