Recipe: Turkey Leftovers - Turkey Florentine, Turkey Terrapin, Turkey Curry, Italian Turkey Casserole

Hi!Hope everyone's Thanksgiving was as wonderful as ours was.Here are some recipes for those leftovers we all enjoy.
Turkey Florentine:
Serves 8
4 Tbls.butter
1 chicken bouillon cube
3 c.diced cooked turkey
1 c.canned,drained mushrooms
4 Tbls.butter
1/4 c.flour
2 c.milk
1 c grated Colby or cheddar cheese
1 tsp.salt
3 Tbls.sherry
dash nutmeg
2 10 oz.pkgs.frozen chopped spinach,cooked & drained
Melt 4 Tbls.butter & crush bouillon cube in hot butter.Saute turkey in butter for 2-3 minutes,stirring to heat evenly.Remove turkey & add mushrooms to butter.Saute 2-3 minutes & add to turkey.Keep turkey & mushrooms hot.
In same pan used to saute,melt the second 4 Tbls. butter & blend in flour.Gradually add milk,stirring till sauce is smooth & thick.
Add cheese,salt,sherry & nutmeg,stirring till cheese is melted.Butter a 9 by 13 baking dish.Spread spinach on bottom of pan.Cover with turkey & mushroom mixture.Pour sauce over all & bake at 350 degrees for 30 minutes,till heated through & bubbly.
Turkey Terrapin:
Serves 6
4 Tbls.butter
2 c.minced cooked turkey or chicken
flour
chicken stock
1 1/2 c.thin cream
1 c.sliced sauteed(or canned & drained)mushrooms
2 hard-boiled eggs
salt,pepper & paprika
1/2 c.sherry
parsley
Melt butter in frying pan.Dredge turkey well with flour & add to butter along with enough stock to blend well,stirring to keep the mixture smooth.
Add cream,mushrooms,& eggs with the whites cut into strips & yolks sieved.Season with salt, pepper & paprika.
Cook slowly till thick & creamy & just before serving stir in sherry.Spoon over toasted & buttered English muffins.
Turkey Curry:
Serves 6
1 c.sliced fresh mushrooms or canned,drained
1/3 c.minced onion
1 large apple peeled,cored & diced
3 c.diced,cooked turkey
6 Tbls.butter
3 Tbls.flour
1/2 tsp.salt
1-1&1/2 tsp.curry powder
1&1/2 c.turkey stock mixed with a little milk or cream
Saute mushrooms,onion,apple & turkey in butter till apple & onion are tender.(If fresh mushrooms are used,saute them alone for several minutes before adding other ingredients.)
Remove from heat & stir in flour,salt & curry powder.Blend in 1/2 cup liquid & return to stove.Cook, stirring & gradually adding remaining liquid,over medium heat till sauce has thickened.
Put in top of bouble boiler & cook over boiling water 15 minutes longer.Taste to correct seasoning.Serve over hot rice.
Italian Turkey Casserole:
Serves 6-8
1&1/2 qts.water
1 tsp.salt
1/2 c.yellow cornmeal
(optional:2 Italian hot sausages,cooked & sliced)
3 c.diced cooked turkey or chicken
1 lb.sliced mushrooms
3 Tbls.butter
2-2&1/2 c.meatless tomato sauce
3/4 c.grated Parmesan cheese
pepper to taste
Place water & salt in large saucepan.Bring to a boil & gradually add cornmeal,stirring constantly with a wooden spoon.Cook over medium heat until consistency of mashed potatoes(about 30 minutes).
Put into a 10 by 10 inch buttered baking dish & level off with spoon.Spoon optional sausage & the turkey over polenta layer.
Saute mushrooms in butter & lay on top of turkey.Spread tomato sauce over all.Sprinkle with Parmesan cheese & a little pepper.Bake at 350 degrees F. for 45 minutes
