We used to make twice baked potatoes a lot.
Basicly
Bake your potatoes as normal.
After baking you cut them in 1/2 lengthwise.
Scoop out the potoato inside put into a big bowl
be careful not to tear the potato skin. If you prefer you can only cut off the top 1/4 of potato and sccop out inside.
Add favorite things to the potato you have scooped out into a bowl, think of it as souped up mashed potatoes. Items to add might be ... sour cream, butter, bacon, mushrooms, cheese, onion, chives .... you get the picture. Mash or whip up the mixture.
Scoop the mixture back into your potato skins. if you have whipped the mixture you can use a pastry bag with tip for this otherwise just spoon it back in. You will have extra.
top with cheese and bacon
can be frozen this way or you can save in fridge and re-bake enough to warm through for serving -- 350 30 min??
