Recipe: Roaster Oven Scalloped Potatoes and Nesco Au Gratin Hashbrown Potato Casserole
Side Dishes - PotatoesDIRECTIONS FOR ONE ELECTRIC ROASTER OVEN OF SCALLOPED POTATOES
(quantity recipe)
1 pound butter
2 cups flour
about 1/2 gallon milk
4 pounds Mel-O-Bit or Velveeta cheese, shredded or diced
25-30 pounds potatoes, whole, unpeeled
Salt (to taste)
TO PREPARE THE SAUCE:
Melt butter in a double boiler. (If you don't have a double boiler this size, use a large kettle, but stir constantly so it will not stick or burn.) Stir in approximately 2 cups flour until smooth. Add about 1/2 gallon milk, stir occasionally. Add cheese and stir until melted. If too thick, add more milk until it gets the consistency of fairly thin gravy.
TO PREPARE THE POTATOES:
Cook potatoes until they are about 2/3 done, pour off the water and when cool enough, skin them and cut in 1 to 1 1/4 inches cubes.
Grease roaster oven, put in the potatoes, pour the sauce on them.
Cover roaster oven and cook until the potatoes are done. After they are boiling, salt to taste, but add it slowly as it can't be removed.
If an electric roaster is not available, a pan of equal size may be used in your oven.
*One (12 oz.) can evaporated milk used for part of the milk is good, too.
Each roaster will serve approximately 60 people.

INSTRUCTIONS FROM THE MANUAL FOR BAKING (IN A PAN OR BAKING DISH) IN THE ROASTER OVEN:
- Use the baking rack to place casserole dishes and baking pans on during cooking time. This will allow for more even baking.
- Two loaf pans will fit into the Cookwell. A meat and a vegetable, or two loaves of bread, may be baked at the same time.
- Cover the baking Rack with aluminum foil and use as a baking sheet.
- Most 1 and 2 quart casserole dishes, 9-inch pie plates, and most 9x13 baking pans will fit into the Cookwell. Place dish on baking rack for more even baking.
- Three 1 1/2 quart pans fit into the Cookwell. Ideal for preparing meat, vegetables and potatoes at the same time. When baking bread, either one or two loaf pans are recommended.
- Convenience foods can be baked in the Roaster Oven. Follow package directions.
SHREDDED AU GRATIN POTATOES

Makes 25 servings
4 lb. frozen hashbrown potatoes
2 1/2 cups milk
1 pint sour cream
2 cups grated cheddar or Swiss cheese
2 cans (10 3/4 oz. each) condensed cream of celery soup
4 green onions, thinly sliced
1/4 cup chopped parsley
1 tbsp. Italian herb seasoning
salt and pepper, to taste
1 cup milk (as needed)
Remove Cookwell. Preheat covered Heatwell to 350 degrees F.
Combine all ingredients in Cookwell; stir until well mixed. Set Cookwell into preheated Heatwell.
Cover roaster oven; bake 1 1/2 hours or until center is set. Gently stir edge into center once halfway through baking time.
To hold: Reduce temperature to 200 degrees F.
Pour (up to) 1 cup milk over top if potatoes begin to dry.
