Recipe(tried): Using rolls of prepared polenta

Instant polenta is usually sold in small boxes (like you'd probably buy couscous, wildand regular rice mix, ec.). It is supposedly faster than making regular polenta - but I was not very pleased with the brand I used a year or so ago (can't remember it's name!).

However, the rolls of prepared polenta the first 2 gals mentioned would not be instant polenta - as it is 'ready'. In our area we get this in the vegetable section (and there is plain, sun-dried, herb, etc. ) It is covered in a tube sort of like you sometimes buy a roll of pork sausage or like the tubes for ref'd cookies.

You simply unroll and cut into slices or however you want it. I've used it - and its not bad. I usually slice it and then brush with a teeny bit of oil - and either broil or grill it. I even cut some thicker slices and then quartered and put in a 'quick' stew-type dish I was making with chicken pieces, tomatoes, onion, etc. We stirred it gently and some pieces were whole and others mashed up a bit - but helped to thicken the juices.

I use this a lot -- as I hate standing and stirring and stirring REAL polenta. My grown daughter thinks it's terrible! So we don't make it when she comes to our state!
