Recipe: Vallejo HS Best Ever Banana Cake (1952)

VALLEJO HS BEST EVER BANANA CAKE

This is a very light banana cake recipe from a teacher at Vallejo High School, CA in 1952.

1/2 cup milk
1 tbsp vinegar
2 cups all purpose flour
1 tsp baking soda
1 tsp baking powder
1 tsp salt
1/2 cup solid shortening
1 1/2 cups granulated sugar
3 eggs, separated
1 tsp vanilla
1 cup mashed banana
1/2 cup chopped walnuts

Combine the milk and vinegar; let stand a few minutes. Set aside.

Sift together the flour, baking soda, baking powder and salt.

Cream together the shortening, sugar, egg yolks and vanilla.

Beat the egg whites until stiff peaks form.

Add the flour mixture to the shortening mixture. Mix well. The add the mashed bananas. Fold in egg whites and nuts. Pour into a buttered or non-stick 9 x 13 x 2 inch baking dish.

Bake at 350 degrees F for 35 to 45 minutes.

Cool, then frost with a buttercream frosting.
