Sandwichesespecially enjoyed the lentil loaf, don't cut back on the spices,
suprisingly they are just right.

Mushroom Veggie Burgers

8 ounces white mushrooms
2 tablespoons olive oil, devided
1/4 cup diced onions
2 ounces shitake mushrooms, stems removed and caps diced (3 to 5 mushrooms)
1/4 cup finely diced red pepper
1/4 cup finely diced zucchini
1/4 teaspoon curry powder
1/4 teaspoon cumin
1 cup cooked brown rice
1/2 cup shredded Swiss cheese*
1/4 cup grated carrots
1 tablespoon chopped fresh parsley
1/2 teaspoon salt
1/8 teaspoon freshly ground pepper
4 large lettuce leaves
4 crusty or whole wheat hamburger buns
cucumber slices, for garnish
* for a veggie burger without cheese: Omit Swiss cheese and increase brown rice to 2 cups. Prepare as directed.
Pulse white mushrooms in food processor until finely chopped.
Heat 1 tablespoon oil in large, non-stick skillet over medium heat. Add onion and cook until softened, 3-4 minutes. Add white mushrooms and cook, stirring occasionally
Meanwhile, pulse brown rice until finely chopped in food processor. Transfer to a medium bowl. Stir in mushroom mixture, cheese, carrots, parsley, salt and pepper, and spices
Shape mixture into four 1/2 inch thick patties. Heat remaining 1 tablespoon of oil in same skillet over medium-high heat. Cook patties 4-5 minutes per side.

LENTIL BURGERS (vegan)

1 c. lentils
3 c. water
1 c. cooked grain or w.w. flour
2 tsp. cumin
1 tsp. soya sauce
1 small onion chopped
3 Tbsp. butter or oil (opt)
Cook lentils in water for 45 min. until soft. Add remaining ingredients (except butter) to cooked lentils. The burger dough should be stiff. Add more w.w. flour or grain if it is too sticky to form into patties. Wet hands and form into 'hamburger patties'. Fry patties on both sides in melted butter or oil, until crisp, or bake, on a well oiled cookies sheet at 350 deg. for approx. 30 min. or until a crust forms. Makes 8-10 burgers. (can use non-stick spray in fry pan).

NOTES : This came from Veggies Unite on the internet, where it got rave reviews, it is pretty good for a veggie type burger and it's easy too.

Savory Lentil Loaf

1 3/4 c. green lentils
4 c. water
1 bay leaf
1/2 Tbsp. salt
1/2 Tbsp. soy sauce
1/2 Tbsp. garlic powder
1/2 tbsp. celery seed
1/2 Tbsp. basil
1/2 Tbsp. thyme
1/2 Tbsp. sage
1/2 tsp. nutmeg
1/4 tsp. cayene
2 med. onions chopped
1 1/2 c. celery minced
1 c. mushrooms chopped
2 c. slow cooking rolled oats
2 Tbsp. vegetable oil
4 eggs -- slightly beaten
1 med. tomato -- sliced
Wash lentils and bring to a boil with water, bay leaf, salt and seasonings. Reduce heat to simmer and cook with lid ajar. After 20 minutes, add the celery, onion and mushrooms. Cook for about 10 min. more, until lentils are tender and water is absorbed. Preheat oven to 350 deg. Remove lentils from heat, remove bay leaf and stir 1 min. to let cool. Add oats and oil and mix well. Add eggs and quickly mix again. Grease the bottom and sides of a loaf pan. Line the bottom with tomato slices and sprinkle with a little salt. Press the lenit mixute into the pan and bake at 350 deg. for about 40 min. Let cool a little, then separate loaf from the pan and invert over a serving platter. Top with a sprinkle of cheese to melt on the hot slices or with a favorite sauce. May be served cold in sandwiches or reheated in pan. Freezes well. 6-8 servings (serve with a rich primavera sauce) This is also excellent served reheated. It can be served as a 'hamburger' in a bun with mustard, lettuce tomatoes etc., yummy!

VEGGIE BURGERS

1 1/2 c. carrots grated
2 c. rolled oats
1/2 cup string beans, diced(or other veggies)
1/2 cup cabbage ,diced
1/2 cup mushrooms, diced
1/2 cup broccoli, diced
1/2 cup onions , diced
1 clove garlic, (pressed)
3 tbsp flour -- (give or take)
1/4 cup water
1/4 cup soy sauce
salt & pepper to taste
Mix all the ingredients together - shape into patties. Brown patties on
both sides - place in a baking pan and bake 25 to 30 minutes.
I had some spinach and brocolli burgers that were delicious..no meat, made with grains, maybe some cheese. The person who made them is out of business so I can no longer get them. Would love a recipe! I didn't find the exact recipe, but this one from SOAR has a lot of vegetables in it.
