Recipe(tried): Sandwich ideas that don't include cheese or red meat - Jennifer here's some thoughts....
SandwichesI have been feasting on meals of chickpeas covered with the great tasting juicy tomatoes I have available from a hydroponics farm near us.
What about hummus on pumpernickel with thick slices of fresh, ripe tomato? My DH won't touch hummus, but it sounds good to me!
DH likes tomato onion sandwiches with mustard or mayo
I roast lots of veggies at once and use them on sandwiches with a drizzle of salad dressing for DH (none for me at the moment) eggplant, roasted peppers of different colors, onions, mushrooms of all kinds, fennel. A spicy brown mustard is very good on this sandwich or a little spaghetti sauce.
Egg salad
Peanut butter, banana and honey
Olive spread with sliced tomatoes
Shrimp or crab salad
I sometimes use fat free spinach dip for a sandwich spread with sliced tomatoes, very yummy in my humble opinion
Not sure if chicken is an option, but you can make a great spread with cooked chicken (even canned), cashews, celery, mayo and dried cranberries
Chunky guacamole is great on pumpernickel too!
Green chilies are a great addition to a veggie sandwich
How about a bagel or pita bread for a change of pace?
