there is a bisquick recipe for a velvet crumb cake. I have adapted it using reduced fat bisquick, and reduced fat butter or margerine.i usually omit the coconut and nuts and its still great. my roomates love this recipe! ENJOY
1 1/2 cups reduced-fat Bisquick
1/2 cup sugar
1/2 cup skim milk or water
2 tablespoons red-fat butter or margerine
1 teaspoon vanilla
1 egg
Crumb Topping (below)
1. Heat oven to 350 F. Grease and flour 8-inch square pan or 9-inch round pan.
2. Beat all ingredients except crumb topping in large bowl on low speed 30 seconds, scraping bowl constantly. Beat on medium speed 4 minutes, scraping bowl occasionally. Pour into pan.
3. Bake 30 to 35 minutes or until toothpick inserted in center comes out clean; cool slightly.
4. Make Crumb Topping; spread over cake. Set oven control to Broil. Broil about 3 inches from heat about 3 minutes or until golden brown.
Crumb Topping
1/2 cup flaked coconut
1/3 cup packed brown sugar
1/4 cup chopped nuts
3 tablespoons reduced-fat butter or margarine, softened
2 tablespoons milk
Stir together all ingredients until they form a crumbly consistency spread evenly over top of baked cake and bake for another few minutes or broil for 1-2 minutes until golden brown.
