Vietnamese grilled lemongrass chicken (ga nuong sa)
Serve 3-4
Noodles and a green salad make fine partners for this delicious chicken, which you ca n serve as an appetizer or main course.
2 stalks lemongrass, thinly sliced
3 shallots, chopped
1 chili, chopped
3 cloves garlic, chopped
1 Tbsp oil
1/4 tsp salt
1 Tbsp soy sauce
1 Tbsp oyster sauce
2 tsp fish sauce
1 Tbsp honey
1 tsp sugar
1 tsp sesame oil
1/4 tsp freshly ground black pepper
450g (1 lb) chicken meat, cubed
12 bamboo skewers
pound the lemongrass, shallots, chili, garlic and oil until fine. Add the salt, soy sauce, fish sauce, honey, sugar, sesame oil and pepper to the lemongrass mixture,, stirring well to combine. Place the chicken cubes in a large bowl with the paste and marinate for about 1 hour.
Meanwhile, start the barbeque fire. Soak the bamboo skewers. (a gas grill from the oven is fine.)
When ready to eat, thread the chicken cubes on the s skewers and grill over medium-hot coal until done, about 4 minutes on each side. Remove from the fire and serve. (or you may thread the cubes and leave the skewers along with the meat in the marinade till ready to grill. or another way is it use larger cuts of chicken such as thugh and omit the skewers. and serve it as a main course.)
