Recipe(tried): Watermelon Salad

This might work! We recently enjoyed this in Israel. You can serve it either as a salad or dessert. Slice a quarter of a watermelon into 1" slices and leave on the rind. Sprinkle the top with feta cheese (although I think grated mitzithra is wonderful too.) Sprinkle a little bit of chopped mint over the cheese. That's it!

It's delicious, easy, fun and refreshing. The salty feta (or mitzithra) works well against the sweet juicy watermelon. Don't put on too much mint as it can be overbearing for the subtle flavours. Decorate the platter with extra sprigs. It looks particular nice in the green rind, but nothing says you can't cut it into chunks in a glass bowl and top it with the cheese and mint.

Everyone will be pleasantly surprised! We all were.
