SPRITZ COOKIES
from Wear-ever Cookie Gun Pamplet for Fran
1 cup shortning (I use unsalted butter)
3/4 cup sugar
1 egg
1 tsp lemon extract (I use vanilla extract)
2 1/4 cups sifted all purpose flour
1/4 tsp salt
1/2 tsp baking powder
With mixer at medium to high speed, cream shortning until soft. Add sugar gradually, continuing to cream until light and fluffy. Add egg, extract; beat well.
Sift flour, salt, baking powder together; add in 3 additions; beat weel after each addition.
Shape dough into 2 rolls; wrap in plastic film or foil; refrigerate about 1 hour.( I don't do this and it works fine.)
Fll cookie gun; make into desired shape on ungreesed cookie sheet.
Bake 7-9 minutes at 400 F or until golden brown, being careful not to overbake. When making ribbon cookies using saw tooth disc, bake 6-7 minutes.
Makes 6-7 dozen when dial is set between thin and medium.
