Recipe(tried): Wedding Brunch Menu

Congratulations on the happy occasion!! For Wedding Breakfast Buffet I would serve the following:
Assorted Quiches (Each quiche serves 8 people so you would need 7-8 quiches.
Morning Potatoes (recipe follows) - These I would cook at home and carry to the hall in those big, disposable lasagna type pans. I would cook a big 20 lb bag.
A couple of glass bowls with cut up cantaloupe, grapes and bananas drizzled with orange juice
A big platter of sausage links
A big platter of store bought mini-croissants
A couple of jars of marmalade put into small glass bowls with spoons
A 6 to 8 beautiful glass carafes of orange juice and apple juice
Buy Chinet sturdy dishes and disposable white plastic cutlery, lots of flowers like sunflowers and greenery on white tablecloths an of course, we mustn't forget a sweet wedding cake. Every bride loves her wedding cake!
I'm sure someone will come up with more precise amounts as you decide what to serve. There are a lot of wonderful recipes for Quiche here and the potatoes I am talking about are my 'Papas Brava', my, but they are delicious!! Wish I were there to put it together and help you cook!

PAPAS BRAVA
1 medium onion, chopped
1/2 green bell pepper, chopped
2 garlic cloves, crushed
3 Tbsp. olive oil
3 to 4 potatoes, washed, peeled and sliced
1 Tbsp. parsley
cayenne pepper to taste
paprika
salt and pepper to taste
Saute onions, bell pepper and garlic in oil for 5 minutes.
Add potatoes and seasonings and toss to coat well. Adjust the cayenne pepper to your taste. Cover as the steam will tenderize the potatoes, at first cook over medium heat and as they cook, turn to low. Try to get a nice brown crust on the bottom and then toss and break up. Delicious!!!
