Recipe(tried): Weekend Fare for Couch Potatoes!!!!!!!!

Some things I made for the weekend to eat whilst we watched the cricket(World Cup) and the Formula 1 Gran Prix.It was really couch potatoe weekend which was wonderful as its still cold and we had a log fire going all weekend!!!!!!!

CHOCOLATE BUTTERMILK CAKE
***********************************************
2 cups flour
2 cups sugar
1 tsp bicarb of soda
pinch salt
1/2 cup butter
1 cup water
1/2 cup oil
1/2 cupcocoa powder
2 large eggs
1/2 cup buttermilk

ICING
*******
1/3 cup butter
2 Tbls cocoa powder
3 Tbls buttermilk drop vanilla essense
1 1/2 cups icing sugar(confectioners)

Sift togertherflour,sugar,salt and bicarb.Heat together butter,water,oil and cocoa and bring to boil, reduce heat and allow to cool and pour over flour mixture.Mix well,whisk together the eggs and buttermilk and add to flour mixture.
Grease and base line a large reqtangular dish or 23 cm tube pan.
Pour mixture into prepared pan and bake in a pre-heated oven for25 mins at 180c(350f)
For the Icing

Melt butter and stir in icing sugar,cocoa,vanilla essense and buttermilk.mix til smooth and pour over cake whilst still a bit warm.

This I got from the net,I just can,t remember where but its really good and makes masses so I,ve frozen the left overs for another day

RUSTLER'S CHILI

2 lbs. lean, ground beef
2 medium onions, chopped
1 green peppers, chopped
1 stalk celery, chopped
1 clove garlic, minced
2 (16 oz.) cans tomatoes, cut up
1 (15 oz.) can tomato sauce
1 1/2 cups water
6 or 7 pickled jalapeno peppers, rinsed and chopped (1/2 cup)
1/4 cup chili powder
1 tsp. ground red pepper
1/2 tsp. EACH salt and black pepper
1 bay leaf
2 cans red kidney beans
Cook ground beef, onions, green pepper, celery, and garlic in large pan till meat is browned. Do not drain. Stir in undrained tomatoes, and remaining ingredients except kidney beans.
Simmer uncovered for 1 1/2 hrs., stirring occasionally. Stir in beans and cook another 30 minutes.
I served this with Pita breads ,warmed in the oven and split in half

I was born in Wales and this was something my gran would make often on a saturday morning for all her gran children when they came to visit,i lived a few doors away so i would visit often!!!!!!!!!I made these for breakfast for sunday morning,and served it with some freshly made apple muffins
WELSH OMELETTE: CREMPOG LAS

8oz Plain flour
2 Eggs separated
4 Tablespoons milk
4 Teaspoons of chopped parsley
Pinch of grated mace or nutmeg salt
Small amount of oil ( of your choice.....for the pan ) 1) Put the flour into a bowl,add the salt, mace and the beaten egg yolks.
2) Mix well with a fork, then stir in the milk, beating so that it is smooth.
3) Whip the egg whites, until stiff, add the chopped parsley and finally fold in the egg whites well, ensuring they all mix well.
4)In Wales this would be fried in a large pan and then cut into 4 for serving, but if you want 4 separate omelettes can be made.
