Recipe: Zucchini Burgers (using Cheddar cheese and wheat germ)

Main Dishes - Meatless
ZUCCHINI BURGERS

1 cup shredded zucchini
1/2 cup diced cheddar cheese
2 eggs, beaten
1 small onion, chopped
1/2 cup crushed crackers, bread crumbs, or croutons
1/3 cup wheat germ
1 tablespoon margarine

Mix all ingredients except the margarine together.

Drop by tablespoonfuls on non-stick skillet in which one tablespoon margarine has been melted. Brown each side about 8 minutes on medium heat.
