PINEAPPLE-COCONUT COOKIES

1/4 cup plus 1 Tablespoon enriched flour
Artificial sweetener to equal 2 teaspoons sugar
1/4 teaspoon baking powder
2/3 cup nonfat dry milk powder
1/2 cup canned crushed pineapple, no sugar added
1/4 teaspoon vanilla extract
2 teaspoons shredded coconut

Preheat oven to 350 degrees F.

Sift together flour, sugar, and baking powder. Add remaining ingredients except coconut and mix well. Drop by teaspoonsful onto nonstick baking sheet that has been sprayed with nonstick cooking spray, allowing room for cookies to spread. Sprinkle cookies with coconut.

Bake 15 minutes or until lightly browned. Remove from pan; place cookies on rack and let cool until they become crisp.
