Recipe: Toasted Mushroom Rolls (like Hough Bakery)

HOUGH'S-STYLE TOASTED MUSHROOM ROLLS

1/2 pound fresh mushrooms, chopped finely
1/4 cup butter
3 tablespoons all-purpose flour
1/2 teaspoon salt
1 cup light cream
2 teaspoons chives minced finely
1 teaspoon lemon juice
1 large loaf sliced white bread
1/2 cup butter or margarine, melted
1/2 cup walnuts, minced very finely

Heat oven to 400 degrees F.

Saute mushrooms in butter for 5 minutes.

Stir in flour and salt. Blend in cream and stir over medium heat until thick. Stir in chives and lemon juice. Cool.

Remove crusts from bread slices. Using rolling pin, roll slices thin. Cover with dampened towel to keep pliable.

Spread each slice with mushroom mixture and roll up. With pastry brush, brush each roll first in melted butter, then roll in nuts. Cut each roll in thirds and place, seam side down on ungreased baking sheet.

Bake in preheated oven for 10 minutes or until toasted.

Makes 102 rolls
