Recipe(tried): Welcome to the exciting world of vegetarianism

Tips and Tricks - Cooking
Welcome to the exciting world of vegetarianism. There really isn't too much to be worried about. A vegetarian diet is no more or less healthy than the average North American's diet. The same rules apply - think variety, fresh, and less refined and processed foods. Taking a multi-vitamin is good advice for anyone. Jackie's advice was almost correct. B12 is a concern, but really only becomes a serious issue if you eliminate all animal products (vegan). You can also get it in a product called nutritional yeast. Iron is also a concern if you aren't eating a balanced diet.
The best resource I have is a book called Becoming Vegetarian. If you believe this to be a long-term lifestyle change, you should invest in that book. It provides really good nutritional information. After that, I would suggest downloading some recipes from this site or buying a couple cookbooks and start exploring. In my experience, the best vegetarian recipes are the ones that aren't trying to be meat substitutes. Often Asian, African, and LAtin American Recipes are meat-free. They are full of interesting flavours and smells. Once I lost the taste for meat, I started to cook some of the meat substitute recipes like vegetarian "neatballs" or "neatloaf". I love them now, but didn't when I first became a vegetarian because I kept hoping they would taste like meat (which they never do). Now I just enjoy them for what they are.
One last thing to remember is that there really are no rules to being vegetarian. Each vegetarian probably has a unique list of things they do and do not eat. You will need to develop that list for yourself. Be prepared, however, for the constant questions about why you are doing this. For some reason, "because I want to" is not a sufficient response for these questionners.
If you provide me with a bit more specific guidelines about the types of food you like, I could come up with a number of recipes for you.
Good Luck!
Patricia
