Recipe: I'm a Vegetarian This Week Veggie Burgers (using brown rice, oats and beans)
Main Dishes - MeatlessI'M A VEGETARIAN THIS WEEK VEGGIE BURGERS
1/4 cup cooked brown rice
1/4 cup uncooked rolled oats
1/4 cup canned white beans, rinsed and drained
1/4 cup grated Parmesan cheese
1 cup chopped raw cauliflower
1 cup chopped raw mushrooms
1/2 teaspoon finely chopped onion
1/2 teaspoon garlic powder
3 tablespoons catsup (plus more for serving)
6 tablespoons whole wheat flour
Salt and fresh ground pepper (to taste)
FOR SERVING (OPTIONAL):
Hamburger Buns
Pickles
Load all of the ingredients for the burgers, except the flour and salt and pepper, into a food processor and puree on high until completely smooth. Add the flour and process just until mixed in.
Using lightly oiled hands, form 4 patties. Wrap and refrigerate or freeze until ready to cook, or cook immediately.
Heat a griddle pan on medium high, spray well with cooking spray, and sear one side of the burgers quickly, then spray the top with more oil and flip to sear the other side; reduce heat to medium-low and continue to cook through fully, about 5 to 7 more minutes. Season with salt and pepper, to taste.
Serve on buns with pickles and ketchup, if desired.
