Recipe: Eo-E-Tu Ristorante Broccoli Rabe with Sweet Italian Sausage

BROCCOLI RABE WITH SWEET ITALIAN SAUSAGE

1 1/2 pounds sweet Italian sausage
3 tablespoons olive oil
7 cloves garlic, chopped
1 1/2 pounds broccoli rabe, washed, chopped
1/3 cup water
Salt and pepper to taste

Cut sausage into 1-inch lengths. Heat oil in large saute pan and saute sausage to brown slightly.

Add garlic and broccoli rabe. Saute to soften garlic and wilt broccoli slightly.

Add water, cover and let steam until sausage is cooked through. Season with salt and pepper.

Makes 6 servings
