Recipe: What I Serve On Christmas Morning

Dear Jann,

Because our Christmas Meal is a big one and we tend to eat around 2-3 PM, I keep it on the light side.

I serve a light brunch of:

Coffee
Orange Juice
Pecan Coffee Ring
Egg & Sausage Bake
Mixed Fruit & Dip

That seems to keep us all happy until the big feast.

Also, because it is such a busy day, the Pecan Coffee Ring comes from the grocer..I do cut up the fruit (apple, banana, cantalope, grapes, pineapple) and make the fruit dip (sour cream, powdered sugar or honey, lemon juice, cinnamon) to drizzle on it. The Egg & Sausage Bake casserole I prepare the night before and pop in the oven in the morning.

Other times, I have made an overnight french toast casserole and that's good too!
