White Chocolate Mud Cake
Serves: 10
200g Nestle White Melts
250g butter
200ml hot water
1 cups caster sugar
1 cups plain flout
1 cup self-raising flour
2 eggs lightly beaten
1 teaspoon vanilla essence
Frosting:
100g Nestle White Melts
cup cream
250g cream cheese, softened
cup lemon butter or lemon spread
Preheat oven to 180 C Grease and line the base of a 22cm round cake pan. Place Nestle White Melts, butter, water and sugar into a medium saucepan. Stir constantly over medium heat for 2-3 minutes until the butter has melted and sugar has dissolved. Allow mixture to cool slightly.
Sift flours together into a large mixing bowl.
Add cooled chocolate mixture, eggs and vanilla.
Mix until well combined and batter is smooth.
Pour cake batter into prepared pan. Bake for approx 1-1 hours or until cooked through in the centre and golden on top. Allow cake to cool in pan 20 minutes before turning out onto a wire rack to cool completely.
Frosting:
Place Nestle White Melts and cream into a small saucepan. Stir constantly over low heat until chocolate has melted and mixture is smooth.
Cool slightly. Beat cream cheese in medium mixing bowl with an electric beater until light.
Add chocolate cream mixture and continue beating until smooth. Cool until mixture is thick enough to spread over the cake. Drop spoonfuls of the lemon butter onto the frosting and swirl mixtures together with a flat-bladed knife. Serve.
