Recipe: Speedy Frozen Yogurt (food processor)

SPEEDY FROZEN YOGURT

1/3 cup granulated sugar
3 cups frozen, unsweetened mixed fruit such as peach/melon or strawberry/blueberry (bananas also work well)
1/2 cup plain yogurt
1 tbsp fresh lemon juice

In food processor, pulse sugar until fine. Add frozen fruit; pulse until coarsely chopped.

In small bowl, stir together yogurt and lemon juice. With machine running, gradually add yogurt through feed tube. Process until smooth and creamy, scraping sides once or twice.

Scoop mixture into serving dishes, cover with plastic wrap and freeze at least 30 minutes before serving.

*If you don't have frozen fruit on hand, you can chop up fresh fruit and freeze on a cookie sheet for a few hours.

Makes 4 servings (2 1/2 cups)
