My mother always called white sauce (Milk Gravy)
She would put the shortening, butter or what ever in a frying pan, melt it and add a Tablespoon of flour or two and brown in frying pan, add milk, salt, and pepper.
I believe it was a tablespoon of flour for each cup of milk. Stir well while cooking.
