Recipe: Wild Rice with Grapes (serves 2)

WILD RICE WITH GRAPES

"The simple addition of grapes turns wild rice into a special side dish."

2 Tbsp. vegetable oil
1 carrot
1 rib celery
1 small onion
1/2 cup uncooked wild rice
1 1/2 cups water
1 bouillon cube
1/2 cup green seedless grapes, halved lengthwise

Heat medium saucepan over medium-high heat for about 30 seconds or until hot. Add oil and diced carrot, diced celery, and diced onion; saute until soft, about 5 minutes.

Add wild rice; cook, stirring constantly, until rice is hot, about 1 minute. Add water and bouillon cube; bring to boil. Stir rice, cover pan and reduce heat to low. Simmer 45-55 minutes, until rice is cooked through.

Turn off heat, add grapes; stir and cover until ready to serve.

Serve with slotted spoon in case there is any excess water.

Makes 2 servings
