JACK'S SHRIMP AND SAUSAGE DRESSING
1/2 cup unsalted butter
3 ribs celery, chopped medium
1 medium onion, chopped medium
1 small green bell pepper, chopped medium
1 tablespoon Italian seasoning
1 (14 1/2-ounce) can chicken broth
1 bag seasoned bread cubes
1/2 pound Italian sausage, cut into bits
1 (16 ounce) tube sage sausage, pinched into bits
1 pound medium shrimp, peeled, deveined and cut into 1/2-inch pieces
1 cup shredded pecorino Romano cheese
salt and ground black pepper, to taste
In large pot, melt butter and saute celery for 3 minutes.
Add onion and green pepper and saute for 5 more minutes.
Sprinkle Italian seasoning over mixture and stir. Add 12 ounces (1 1/2 cups) of the chicken broth and bring to boil. Remove from heat and add bread cubes, mixing well. Allow to cool.
Add Italian sausage, sage sausage, shrimp and Romano cheese. Add salt and pepper to taste. Stir until well combined. (At this point, dressing may be chilled overnight.)
TO BAKE:
Preheat oven to 350 degrees F.
Bake for 45 minutes to 1 hour or until completely cooked through. Allow to cool 15 minutes and serve.
Makes 10-12 servings
