Recipe: Wilted Spinach and Potato Salad

WILTED SPINACH AND POTATO SALAD

"Serve as salad or as vegetable with meat or poultry."

1 (10 ounces) package frozen leaf spinach, thawed and drained (or 1 pound fresh spinach, trimmed, washed, dried and torn in pieces)
1/3 cup sliced green onions
4 slices bacon, cut crosswise in 1/2-inch pieces
1/4 cup red-wine vinegar
1 teaspoon sugar
1/2 teaspoon salt
1/8 teaspoon pepper
6 small new potatoes (1 pound), cooked, peeled if desired, and cut in quarters

In large serving bowl toss spinach with green onions; set aside.

In large skillet cook bacon until crisp; with slotted spoon remove from skillet.

Cool drippings in skillet before adding vinegar, sugar, salt and pepper. Heat to just boiling.

Leave small amount of dressing in skillet and pour rest over spinach mixture. Toss to coat thoroughly. Top with potatoes. Drizzle potatoes with remaining dressing. Sprinkle with bacon.
