Here are some of my most delicious soups. Just pass the soup through the blender to make it smooth. They are very, very tasty!

Yucatan Carrot Soup with Cumin and Lime

2 tsp. olive oil
2 lbs. carrots, peeled and chopped (about 5 cups)
2 large leeks (white and pale green parts only, chopped, about 2 cups)
1 tbsp. chopped garlic
2 1/2 tsp cumin
1/2 tsp. crushed red pepper flakes
6 1/2 cups or more chicken broth
8 tbsp. sour cream
2 tbsp. lime juice
2 tbsp. fresh cilantro
2 tbsp. grated lime peel

Heat oil in a heavy pot over med heat. Add carrots and leeks, saute til leeks are soft but not browned, about 5 minutes.

Add garlic, saute 1 minute. Add crushed red pepper flakes and cumin and saute 30 minutes.

Add broth-boil-reduce and simmer till veggies are tender-35 minutes.

Working in batches, puree the soup and transfer to a large serving bowl. Whisk in the sour cream and before serving stir in the lime juice and sprinkle with cilantro and grated lime peel.

THIS IS DELICIOUS!!

Cream of Broccoli and Cheese Soup
This soup serves 6 and can be easily doubled. It is unbelievably delicious!!

2 Tbsp. butter
1 med. onion, chopped
2 garlic cloves, crushed
1/2 cup butter
1/2 cup flour
1 qt. half-and-half
1 qt. chicken stock or bouillon (I use SUPERIOR TOUCH BETTER THAN BOUILLION CHICKEN BASE)
1 lb. fresh broccoli (I use a whole rubber-banded bunch)washed, cut up and save the stems for the salad
2 cups carrots, grated
salt and pepper to taste
1/4 tsp. nutmeg
8 ozs. grated sharp cheddar

Saute onion in butter. When onions are golden, stir in garlic and cook for 3 more minutes. Set aside.

In another pan melt the 1/2 cup of butter and stir the butter and flour (make a roux) using a whisk over med. heat for 3-5 minutes. Stir constantly and slowly add the half-and-half. Add the chicken stock whisking all the time. Simmer for 20 minutes.

Add the broccoli, carrots and onions. Cook over low heat till veggies are tender for 20-25 minutes. Add salt and pepper.

Pour in batches into blender and puree. Return to pot and add the grated cheese and stir til well blended.

Put on low heat and stir in the nutmeg.

Garbanzo Soup
serves 6

1 pkg. garbanzos beans
2 chorizos
5 c. water
1 bay leaf
2 smoked ham hocks
3 garlic cloves
1 packet of Sazon Golla with Culantro & achiote
1/2 green bell pepper, chopped
1 med. onion, chopped
2 T. olive oil
3 garlic cloves, minced

Cover the beans with water and let soak overnight. Next day rinse, and put the beans in the pressure cooker with 5 cups water, 3 garlic cloves, 1 bay leaf, 2 ham hocks and the cut up chorizo. Pressure cook on medium for 25 minutes. Make sofrito meanwhile: saute the chopped onion, bell pepper and garlic in oil til onion is golden. Add to soup & stir. Add the seasoning Golla Sazon and stir. Simmer for 25 minutes.
