Recipe(tried): Zucchini Candy (dehydrator recipe)

This seemed so different I had to try it. It is really amazing. The final result is like fruit snacks. My family loves them. No one can tell it is made from zucchini.

ZUCCHINI CANDY

10 cups peeled, seeds removed, diced zucchini (1/2 inch cubes)
FOR THE SYRUP:
3 cups water
2 1/2 cups sugar
2 packets unsweetened Koolaid

Peel zucchini, remove seeds and dice.

In a large saucepan mix the ingredients for the syrup together. Add zucchini. Bring to a boil and then simmer for 25 minutes. Drain.

Put zucchini on dehydrator trays. Dry 14 hours at 125 degrees F. Turn pieces over and dry another 4 hours.* This will feel dry and not sticky when done.

Store in jars or other tightly sealed containers.

*If you dip the zucchini in sugar when you turn them, they will be more like "gum drops" on the outside.

VARIATION:

PINEAPPLE FLAVORED ZUCCHINI CANDY:
You can do the same thing with the zucchini but for the syrup mixture use:
48 oz. pineapple juice
2 1/2 cups sugar
1/4 cup lemon juice
2 tablespoons pineapple extract
