Recipe(tried): Zucchini Quick Bread

Zucchini Quick Bread

2 cups Sugar
3 eggs
1 cup oil
2 cups zucchini(not cooked) shredded
3 tsp vanilla
3 cups all-purpose flour
1 tsp salt
1 tsp soda
1/4 tsp baking powder
3 tsp cinnamon
1 cup nuts

Put first 5 ingredients in bowl and mix until well mixed. Add flour and rest of ingredients and mix well. Put in 2 greased loaf pans. Bake at 350 degree for 1 hour.
Note: Zucchini is very moist. I press out excess moisture before adding to bowl so that bread doesn't collaspe. Some moisture is fine.
