Recipe: Almond Anise Loaf (quick bread using anise seed)

ALMOND ANISE LOAF

1/2 cup butter, room temperature
1 cup sugar
1 tsp. anise seed
1/4 tsp. almond extract
4 eggs
2 1/2 cup flour
2 tsp. baking powder
1/2 tsp. salt
2/3 cup finely minced toasted almonds
Powdered sugar and water (mixed for glaze consistency)
Whole toasted almonds (optional, for decorating)

Preheat oven to 350 degrees F. Grease and flour a loaf pan.

Cream together butter and sugar. Add anise seed and almond extract. Add eggs one at a time, beating well after each. Add flour, baking powder, and salt; mix well. Stir in almonds. Pour batter into prepared pan.

Bake at 350 degrees F for 1 hour or until done. Remove from pan and set on a rack to cool.

Glaze cooled bread with powdered sugar-water mixture. Top with whole toasted almonds, if desired.
