Recipe: Irish Cabbage Soup

IRISH CABBAGE SOUP

6 sprigs parsley
1 bay leaf
5 slices thick-cut bacon, diced
2 medium onions, sliced
1 turnip, sliced
2 carrots, diced
2 potatoes, in 3/4 inch cubes
1 head green cabbage, shredded
6 cups chicken stock

Tie parsley and bay leaf together or put in cheesecloth. This is a bouquet garni.

In a heavy 6 quart saucepan or Dutch oven, cook bacon until crisp. Remove with a slotted spoon and reserve for garnish.

Put bouquet garni and remaining ingredients, except for salt and pepper, in pot. Bring to a boil. When boiling, lower heat to medium-low and simmer, partially covered, for 1 to 1 1/2 hours or until all ingredients have softened.

Season with salt and pepper to taste. Pour into hot soup bowls and garnish with reserved bacon.
