Just found this site. I noticed the request was made three years ago. It's a long time to wait, but the recipe is worth it.
KNOTT'S BERRY FARM LINZER SLICES
FOR THE LINZER SLICES BASE:
1 cup shortening
1 cup sugar
1/2 tsp. baking soda
1/2 tsp. cinnamon
1/2 tsp. salt
2 eggs
1 tsp. vanilla
1 2/3 cups flour
1 3/4 cups cake or bread crumbs
3/4 cup chopped walnuts
Cream shortening with sugar, baking soda, cinnamon, and salt. Add eggs and vanilla; mix well. Stir in flour, crumbs, and walnuts. Refrigerate until slightly chilled.
Preheat oven to 400 degrees F. Grease a jelly roll pan.
Roll dough into 4 strips, each 4x15 inches. Place on prepared pan and flatten slightly.
Bake at 400 degrees for 10 minutes or till very light brown. Remove and let cool before topping.
FOR THE TOPPING:
3/4 cup shortening
1/2 cup plus 2 tbsp sugar
1 tsp. vanilla
1 tsp. yellow food coloring
1/2 tsp. salt
4 eggs
2 cups macaroon coconut
1 cup raisins
3 tbsp flour
Place shortening, sugar, vanilla, food coloring, and salt in bowl and mix well. Add eggs one at a time and beat till fluffy. Add coconut, raisins, and flour, mix thoroughly. Spread over cooled base.
Bake at 375 degrees F for 10 minutes or till slightly brown. Let cool then spread with icing and cut into diagonal slices.
FOR THE ICING:
2 cups powdered sugar
1/4 cup or less of water
Mix to spreading consistency.
