ZUCCHINI RELISH
1/4 cup chopped fresh cilantro
2 Tbsp. lime juice
2 Tbsp. olive or vegetable oil
1 tsp. salt
1/4 tsp. sugar
1/4 tsp. pepper
2 medium zucchini, finely chopped
Mix all ingredients in glass or plastic bowl.
Cover and refrigerate. Store covered in refrigerator for up to 1 week.
Makes 1 1/4 cups
