ISO: Arepas rellenas con camarones?

I have been to Puerto Rico many times and I always make sure to get arepas in Fajardo when I visit. There, they fill them with a shrimp mixture, almost like a shrimp salad I guess. I have found several recipes for arepa dough and for arepas rellenas con guiso de carne, pero I would really like to know how to make a shrimp filling for the arepas. Any ideas would be greatly appreciated. Thanks!
