Recipe: Baked Acorn Squash Rings (with apples and maple syrup, serves 2)

BAKED ACORN SQUASH RINGS

1 acorn squash (about 1/2 pound)
1 apple, cored and sliced
1 teaspoon maple syrup
1/4 teaspoon ground cinnamon
1 teaspoon water

Preheat the oven to 375 degrees F.

Wash the squash, then slice it crosswise into 1/4-inch rings. Remove the seeds and pulp.

Layer rings of squash and apple in a casserole dish, top with maple syrup, dust on the cinnamon, and sprinkle with the water.

Cover and bake for about 30 minutes, until the squash is tender.

Makes 2 servings
