SWEET AND HOT PEACH RELISH
4 large ripe or semi-ripe peaches, pitted and thinly sliced
1 red bell pepper, cut in thin strips
1/2 cup orange juice
1 tablespoon lime juice (about 1/2 lime)
1 tablespoon molasses
1 tablespoon minced fresh red or green chile pepper (your choice)
1/4 cup chopped fresh parsley
salt and pepper (to taste)
In a large bowl, combine all ingredients; mix well.
This relish will keep, covered and refrigerated, for about 4 days.
