ISO: Birthday Cake for Deployed Sailor

I hope some of you wonderful ladies (and gents!) can help me out. My daughter's fiance is deployed on an aircraft carrier somewhere in the Persian Gulf and will still be there on his birthday in October. She has already worked out details to send his gift to a buddy on the ship to hold until his actual birthday since you can't be sure how long it will take mail to get to him, but she would like to send him some sort of birthday cake, or something that will symbolize a birthday cake. Do any of you have any ideas? I thought maybe a big cookie "pizza", but what could be used to personalize it besides buttercream frosting? Another idea I have is a Popcorn Cake. It is made in a Bundt pan. Do any of you have any other ideas that would hold up during shipping, has a pretty long shelf life, and would make his birthday festive and special?
