RING AROUND MEATBALLS
2 large green bell peppers
1 (8 oz.) can mushrooms
Milk (less than 1/2 cup)
1 lb. ground beef
3/4 cup soft bread crumbs
1 egg, beaten
2 tbsp. chopped onion
1 tsp. Worcestershire sauce
Salt and pepper to taste
2 tbsp. catsup
2 tbsp. grated cheese
Clean bell peppers; cut each pepper into 3 rings. Place rings in a shallow baking pan.
Drain mushrooms; reserve liquid. Add enough milk to liquid to make 1/2 cup liquid.
Combine ground beef, mushrooms, mushroom liquid, bread crumbs, egg, onion, Worcestershire sauce, salt and pepper. Make 6 large meatballs and pack into bell pepper rings (pressing to fill the rings).
Bake at 350 degrees F for 35 minutes. Combine catsup and grated cheese and spoon over meatballs. Continue baking for 10 more minutes.
