ISO: Chewy Coconut Pie Crust
Misc. Several years ago(5-7) either Family Circle or Woman's Day had an recipe for a tropical summer type pie with either a mango or papaya custard/pie filling. I'm not really interested in the filling. But, I would like the pie crust recipe. All the coconut crusts recipes I have seen make a crisp crust. This crust seems to be on the chewy side with very little flour in the crust. Almost candylike. It was golden in color sort of like pecan pie filling made with light corn syrup. I think the pie crust either had corn syrup or sweetened condensed milk as some sort of binding agent. Any help with this would be appreciated.
