Recipe(tried): Cafe Rio Pork (using Coca Cola, brown sugar, and tomatillo sauce)
Main Dishes - Pork, HamHere's a recipe that uses both Coca Cola and brown sugar which makes it really sweet. If you try it, let me know what you think!
CAFE RIO PORK
FOR THE PORK:
3 pounds pork (butt or shoulder)
20 ounce coca cola
1 to 1 1/2 cups catsup
1 clove garlic, minced
FOR THE SAUCE:
2 cups tomatillo sauce
1 1/2 cups brown sugar (more or less, to taste)
juice of 2 limes
salt and pepper (to taste)
chili powder (if desired)
more catsup (if consistency needs thickening.
TO PREPARE THE PORK:
Place the pork in a crock pot.
Stir together the cola and catsup. Add minced garlic. Pour mixture over meat.
Cover and cook (on HI) for several hours.
When pork is tender, remove it from crock pot and shred.
TO PREPARE THE SAUCE:
Return meat to crock pot and mix in the remaining ingredients for the sauce.
Cover and simmer on low until ready to serve.
