ISO: Chocolate Red Beet Cake

This chocolate cake using beets sounds intriguing. I am wondering if my home-canned pickled beets would be acceptable. I have seen other older recipes with vinegar added, so perhaps it would turn out o.k. Anyone have any ideas?
