ISO: Coconut Bread - West Indian Style

I had this at a local restaurant when I was in the British Virgin Islands. It was round and flat about an inch thick and tasted somewhat like a windmill cookie. It was served with pea soup and it was wonderful!

Does anyone have a recipe that they could share?
