ISO: Creative ideas for leftover meats

I frequently get a craving for old time comfort foods, like pot roast, roast chicken, ham, etc. But even if I buy the smallest cut of meat, and can have a friend or two join me, I still have a lot of leftover meat. I have sooooo many recipes I'd love to try for the main dinner, but really burn out on using leftovers. NOT looking for the normal sandwiches, heat in gravy, etc. but something really unusual.
