Recipe(tried): Leftover Beef w/sauce

Misc.

Roberta,
This is a great recipe using leftover roast beef, but it's the sauce that makes it so different and delicious.

Beef, Baguette, and Garlic Sauce
1 Baguette ( large roll )
1 cup shredded lettuce
1 lb. cooked roast beef, thinly sliced
1 small red onion--thinly sliced

Garlic Sauce
1 hard cooked egg
2 cloves garlic finely chopped
1 Tablespoon snipped parsley
1 Tablespoon Dijon--style mustard
2 teaspoon lemon juice
1 teaspoon water
2 drops red pepper sauce
Dash of salt
1/4 cup olive oil ( extra light )
Place egg, garlic, parsley, mustard, lemon juice, water, pepper sauce and salt in blender container. Cover and blend on low speed, stopping blender occasionally to scrape sides, until smooth, about 45 seconds. Add oil, 1 Tablespoon at a time; blend after each addition until smooth.

Prepare Garlic Sauce. Cut baguette lenghtwise into halves. Place lettuce on botton half. Arrange beef on lettuce; place sliced red onions over beef. Spoon Garlic sauce over onions and beef; Top with remaining half of baguette , cut diagonally into slices.
Enjoy !!!!
